Sodium benzoate, with the chemical formula CHCOONa, is the sodium salt of benzoic acid. While benzoic acid occurs naturally in some plants and fruits like cranberries and cinnamon, sodium benzoate itself is a manufactured additive. It is an odorless, crystalline powder that is highly soluble in water. It works most effectively in acidic environments (pH below 4.5) to prevent spoilage and extend shelf life by disrupting the internal pH balance and metabolic processes of microorganisms.
